1 cup all purpose flour, 2 tbsp(yes TBsp.) baking powder, 1 tbsp sugar, pinch of salt, 1 cup soy milk, 2 tbsp vegetable oil.
mix all the dry stuff; add in the milk and oil; mix mix mix; dollop batter onto preferred stove element; add in desired additional ingredients (I used bananas, pumpkinpie spice, honey molasses, and the sugar/chocolate/coffee bean mix from Trader Joe’s); when the bottom lifts easily from the stove top, flip the pancake; remove when the second side no longer sticks to the stove top.
These measurements make about 8-12 depending on size, so try not to eat them all while you’re baking! ;P
